Dah, cilbir, olive oil on bread, and oat meal (with cinnamon, nutmeg, and coconut oil) are pretty good. I've been making all of these frequently as of late. I won't mention the things I've been trying lately but haven't liked.

I don't know what to call it. Quiche sort of?

Bag of broccoli with sauce in a 9 inch cake pan with a dozen eggs, top generously with cheddar cheese and bacon bits, cook at 350 for maybe 30 minutes. Gets you a whole lot of food for cheap, sure, but it tastes pretty decent too.

Add sweet potato fries (cooked in olive oil) to my list here. I've been having olive oil on bread for breakfest and a single meal from this list for awhile now. I've been very happy to actually be eating things I enjoy, and eating only once means they provide sufficient variety. I need to find some nice ways to integrate more vegetables however. I really like Greek Salad, and Caprese Salad, so I may look into other Mediterranean salads (preferably with leafy greens). Anyone got any suggestions in this vein?

Was more or less the same dish every day, just five to six eggs in olive oil with potatoes and assorted vegetables. I had the quiche linked here >>12 and it was very good, I would still eat it if it wasn't so time consuming. Cilbir is the only egg dish I currently eat, and it's by far my favorite.

I had a new twist on my sweet potatoe fries. I cooked them in butter instead of olive oil because unsaturated fats aren't good for cooking in my opinion, and I served it in Greek yogurt with cinamon. It was like a normally cooked sweet potatoe except that Greek yogurt is infinitely better than sour-cream and frying rather than baking removed all the stringness and strange texture that you might otherwise get.

Cooking food in butter is really unhealthy. If you really have to, add a little oil. It lends the mix a higher smoke point, so the butter doesn't burn.

What's all the hype about avoiding burn about? IIRC the whole yields-cancer-causing-compounds thing has been revealed to have been overestimated a couple years ago. Besides at least olive oil wont do a whole lot in that regard as it has a rather low burning point itself. It's really not an oil i'd recommend for frying in general but at the same time i don't see much of a problem if one does use it for frying.

Regardless, if you burn olive oil it tastes disgusting, almost like alchohol or something. You can cook sweet potatoes in olive oil while staying under the smoke-point, which is what I did before this. I said unsaturated fats aren't as good for cooking because it's slow and easy to exceed the smoke point resulting in worse tasting food. I still eat lots of olive oil, probably two table spoons a day on average, but strictly as a dressing.

Are you sure it doesn't matter which kind of oil? There is a lot of variance. I 100% wouldn't try to deep fry anything in olive oil. I've fried a ton of stuff in sunflower oil (economics...) but it's kinda borderline and if left on for to long will have your whole apartment smelling like a mix of burned wax and chloride.

Probably. I am not a huge fan of olive taste with fried stuff in general even if it's pretty safe with my current (crappy) cooking equipment. I agree on the dressing. It's pretty great for that. Now i just with i'd be eating the amount salad you seem to eat. I love me some salad but i am way to stressed out to make some most of the time...

No, rare actually. It's interesting because it's basically a 2lb steak for $5. The taste is similar to a rare steak but the texture is very satisfying. It's firm but not tough so you can slice off huge chunks that your teeth almost sink through. Even though a lot of the stuffing fell out, it caramelized nicely in the pan and tasted great heaped on top of the slices. I steamed some broccoli and cauliflower as a side and incidentally, was given a bottle of red wine that made it feel extra fancy. Highly recommended.

I made ricotta the other day for a cranberry strata and have about 5 cups of kefir set aside to turn into more cheese, but I want about 8 total before I do so.

Aside from that I'm going to try tamales, probably with shredded turkey, but only because I want to use a masa dough for a quiche crust and need to play with a few variations without wasting the food. So far, I know I'll use bacon grease instead of lard but I'm most curious as to whether the whey from the cheese can be successfully used instead of stock or if it will be puke-inducing.

Activity at ports and borders has been disrupted, straining the food supply that feeds not only Ukraine, but the world. Since activating five months ago, WCK food cargo trains, and restaurant and farm partners, have been hit by missiles.
