Regardless, if you burn olive oil it tastes disgusting, almost like alchohol or something. You can cook sweet potatoes in olive oil while staying under the smoke-point, which is what I did before this. I said unsaturated fats aren't as good for cooking because it's slow and easy to exceed the smoke point resulting in worse tasting food. I still eat lots of olive oil, probably two table spoons a day on average, but strictly as a dressing.
