Are you sure it doesn't matter which kind of oil? There is a lot of variance. I 100% wouldn't try to deep fry anything in olive oil. I've fried a ton of stuff in sunflower oil (economics...) but it's kinda borderline and if left on for to long will have your whole apartment smelling like a mix of burned wax and chloride.

Probably. I am not a huge fan of olive taste with fried stuff in general even if it's pretty safe with my current (crappy) cooking equipment. I agree on the dressing. It's pretty great for that. Now i just with i'd be eating the amount salad you seem to eat. I love me some salad but i am way to stressed out to make some most of the time...
