Veganism is a bad idea for children due to lack of nutritional completeness. The food waste and ethics of animal husbandry is irrelevant to this fact. Children fed a vegan diet are stunted, ergo, no state with any sense of self-preservation would formally embrace veganism amongst its future citizens. Parents that want to maim their children should be free to do so, but without state support in the immediate or long term.
With this said, your argument is fallacious because it operates on a snapshot rather than in terms of systems and incentives. Vegan *food* (which is to say foods that do not attempt to mimic animal products) have almost categorically fewer inputs and calories than animal products. On either basis, wasting vegan food will result in less loss.
As far as ethics go, meals are purchased on the basis of expected consumption by students. Each vegan student decreases demand, which results in fewer purchases, reducing cost, reducing profit, and accordingly reducing production demand. This *does* in fact reduce animals killed over the long run.
Veganism is dumb because it's unnatural, not because of redundancy or ethics.
